Do You Crave For Bagels? Here is The Regret-Free Version.

‘Everything Bagel’ Cauliflower Rolls

Serving: 4

Ingredients

  • 1 head cauliflower, riced (about 3 cups)
  • 2 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 tbsp organic corn meal (not paleo- you can sub almond flour)
  • 2 organic eggs
  • 1/2 tsp garlic powder
  • 1/4 tsp Himalayan sea salt

“Everything” Topping

  • 1/2 tsp poppy seeds
  • 1 tbsp sesame seeds
  • 1 tsp dried minced garlic
  • 1 tbsp dried minced onion
  • 1/2 tsp Himalayan sea salt

How-To

  1. Preheat oven to 400
  2. In a food processor, or using a hand grater, pulse/grate cauliflower until rice consistency
  3. In a bowl combine eggs, cauliflower rice, almond flour, coconut flour, corn meal, garlic powder, and salt
  4. In a separate bowl combine “everything” topping ingredients
  5. Lay parchment paper on a baking sheet
  6. Make 4 even sized balls and lay onto parchment paper
  7. Sprinkle “everything” topping and slightly press them into the top
  8. Bake for 15-20 minutes, or until bread-like consistency (it might be longer depending on the size you make)
  9. Remove from baking sheet and let cool directly on a cooling rack. Serve with your favorite sandwich ingredients

*Optional: Broil on high for 3-5 minutes after baking
*Optional: For extra crisp, remove from baking sheet and do the broiling step with the buns directly on the oven rack
Please note: Cauliflower sizes vary. If yours is big, and it seems like it needs a little extra to make them firm, add an additional egg and tbsp of flour

How To Make Guilty-Free Ice Cream?

Vegan Creamy Chocolate – Avocado Ice Cream

Prep Time: 4 hours

Serving: 1 quart
Ingredients
  • 1 – 13.5 ounce can full fat coconut milk
  • 1 avocado, peeled and pitted (4.5 ounces)
  • ½ cup unsweetened cocoa powder
  • ½ cup + 2 tablespoons maple syrup**
  • 1 Tablespoon vanilla extract
  • ½ cup water
  • Vegan hot fudge, for drizzling
  • Vegan Sprinkles, for sprinkling on top
How-To
  1. Add the avocado and coconut milk to a food processor/blender and pulse together.
  2. Add the remaining ingredients and blending for about 2 minutes until smooth and incorporated, scraping down the bowl once.
Ice Cream Machine
  1. Place all ice cream base into a freezer-safe container in the refrigerator for 2 hours to set up before freezing.
  2. Freeze the ice cream according to the manufacturer’s instructions for your machine.
Without Ice Cream Machine
  1. Place all ice cream base into a freezer-safe container and place in the freezer and allow to freeze for 1 hour.
  2. Whisk slightly every 20 minutes to avoid it getting too icy for 3-4 hours. It should be getting thicker after each whisking, until it’s firm enough to scoop.
  3. To eat: serve immediately or when you are ready for it (after it’s been in the freezer), thaw for 5-10 minutes and scoop with an ice cream scoop.
  4. You can optionally add hot fudge and sprinkles on top.
  5. Enjoy!

**I recommend to use xylitol or stevia. Here is why for sugar alcohols (xylitol) and here is why for natural stevia. Most importantly they do not spike our blood sugar or raise insulin hormones.

Ingredients:
  • ½ ripe avocado
  • ½ ripe frozen banana
  • 1 cup nut milk or water
  • ½ cup frozen berries
  • ⅓ cup oats
  • 2 cups spinach, romaine or other dark leafy green
  • optional: 1 or 2 Medjool dates, pitted
 
Instructions
  1. Scoop the avocado flesh out of its skin, discarding the pit. Place everything into a blender and blend until smooth and creamy.
  2. Enjoy!
